Lemon Brûlée Posset

A creamy, custard-like dessert with a zesty lemon flavor, topped with a crispy brûlée layer.

Ingredients

  • 1 cup heavy cream
  • ¼ cup granulated sugar (+ more for brûlée)
  • 1 lemons (zested)
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Combine your cream and sugar in a medium saucepan over medium heat until the sugar dissolves.
  2. Add the zested lemon and fresh lemon juice to the cream mixture and stir well.
  3. Remove from heat and let cool for about 10 minutes, then strain through a fine-mesh sieve.
  4. Whisk in the vanilla extract until well combined.
  5. Divide the mixture into serving glasses and refrigerate for at least 4 hours.
  6. Sprinkle a thin layer of granulated sugar on top of each posset.
  7. Torch the sugar until caramelized, or broil under the oven for 1-2 minutes.
  8. Let cool for a few minutes before serving.

Notes

Can be served with fresh berries or mint leaves. The posset can be made ahead and kept in the fridge for up to 3 days.
