  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup raspberries (fresh or frozen)
  • Powdered sugar for dusting (optional)

Instructions

  2. Cream the butter and sugar in a large mixing bowl until light and fluffy.
  3. Add the egg, lemon zest, and lemon juice, mixing until combined.
  4. Combine the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the raspberries gently.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. Scoop generous portions of dough onto a parchment-lined baking sheet.

  10. Cool and dust with powdered sugar before serving.

Notes

Chilling the dough helps develop flavors and reduces spreading during baking.
