Light Avocado Caprese Salad

A refreshing twist on the classic Caprese salad, featuring ripe tomatoes, creamy avocado, fresh basil, and mozzarella.

Ingredients

  • Ripe Tomatoes (2-3 large)
  • Avocado (1 large)
  • Fresh Basil (a handful)
  • Mozzarella Balls (8 oz, preferably fresh)
  • Balsamic Vinegar (2-3 tablespoons)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper (to taste)

Instructions

  1. Prep your ingredients by washing the tomatoes and basil, then slicing the tomatoes into thick rounds.
  2. Cut the avocado in half, twist to separate, and scoop out the flesh before slicing into wedges.
  3. Prepare the mozzarella by draining and slicing it into thick rounds if using a large ball.
  4. Layer the ingredients on a large plate, alternating tomatoes, mozzarella, and avocado with basil leaves in between.
  5. Dress the salad with a whisked mixture of balsamic vinegar and olive oil.
  6. Season with salt and pepper to enhance the flavors.
  7. Serve the salad garnished with additional basil leaves or a drizzle of balsamic reduction if desired.

Notes

For added flavor, consider variations like adding jalapeños, kalamata olives, or toasted nuts.
