Lime Chicken Festival

A delightful dish celebrating zesty flavors of lime, creamy avocado, and fresh cilantro, perfect for gatherings and casual dinners.

  • 4 boneless, skinless chicken breasts
  • 2 limes (juiced)
  • 1 avocado (sliced)
  • 1/4 cup cilantro (chopped)
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by placing your chicken breasts in a large bowl. Squeeze the juice of both limes over the chicken, add the olive oil, chili powder, salt, and pepper. Massage the marinade into the chicken for 2-3 minutes and let sit for at least 30 minutes.
  2. Preheat your grill or skillet on medium-high heat.
  3. Cook the marinated chicken breasts for about 6-7 minutes on each side until done.
  4. Remove the chicken and let it rest for 5 minutes before slicing.
  5. Top with avocado slices and cilantro, and serve.

Notes

For a smoky flavor, add chipotle powder to the marinade; for a tropical take, top with pineapple salsa.
