Refreshing Mango Popsicles

Delight in the sweetness of summer with these refreshing mango popsicles made from ripe mangoes blended with creamy yogurt.

Ingredients

  • 3 cups mango chunks (fresh or frozen)
  • 1 ⅓ cup vanilla yogurt or skyr
  • 2 tbsp maple syrup or honey (or to taste)

Instructions

  1. Prep Your Mango: Start with ripe mangoes! If you have fresh ones, peel and cube them into small chunks. If you’re using frozen mango, let them thaw for about 10-15 minutes.
  2. Create the Mango Mixture: In a blender, combine the mango chunks and vanilla yogurt (or skyr). Blend on high until the mixture is smooth and creamy.
  3. Sweeten the Mixture: Taste your mango mixture and adjust sweetness with maple syrup or honey if desired.
  4. Pour into Molds: Pour the mango mixture into popsicle molds. Optionally layer with some yogurt or sprinkle some granola in between layers.
  5. Insert Sticks and Freeze: Insert popsicle sticks into the molds and freeze for at least 4-6 hours.
  6. Unmold and Enjoy: Run the molds under warm water for a few seconds to help loosen them, then gently pull on the stick to remove.

Notes

For a creative twist, try substituting half of the mango with fresh pineapple or using coconut yogurt for a tropical flavor.
