Cheesy Oven-Baked Zucchini Balls

Crispy on the outside and cheesy on the inside, these oven-baked zucchini balls are a delightful snack or side dish, easy to prepare and packed with flavor.

  • 2 Medium Zucchinis, Grated
  • 1 Cup Breadcrumbs
  • 1/2 Cup Grated Cheese (Mozzarella or Parmesan)
  • 1/4 Cup Fresh Parsley, Chopped
  • 1/4 Cup Grated Parmesan Cheese
  • 1 Egg, Beaten
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • Salt and Pepper to Taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate your zucchini using the coarse side of a box grater and squeeze out the moisture.
  3. Mix together the grated zucchini, breadcrumbs, mozzarella cheese, parsley, grated parmesan, beaten egg, garlic powder, onion powder, salt, and pepper until well combined.
  4. Form tablespoon-sized balls from the mixture and place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, flipping halfway through, until golden-brown and crispy.
  6. Enjoy warm with your favorite dipping sauce.

Notes

Make sure to squeeze out as much moisture from the grated zucchini as possible to avoid mushy balls.
