Mediterranean Pasta Salad with Zesty Lemon Herb Vinaigrette

A refreshing Mediterranean Pasta Salad packed with vibrant colors and delicious flavors, topped with a zesty lemon herb vinaigrette.

  • 1 lb (450g) Rotini Pasta (Cooked al dente)
  • 2 cups (300g) Persian Cucumbers (Sliced into rounds)
  • 2 cups (300g) Cherry Tomatoes (Halved)
  • 1/2 medium (75g) Red Onion (Thinly sliced)
  • 1 cup (150g) Kalamata Olives (Pitted and halved)
  • 6 oz (170g) Feta Cheese (Crumbled)
  • 1/2 cup (15g) Fresh Parsley (Finely chopped)
  • 1/2 cup (120ml) Extra Virgin Olive Oil
  • 1/4 cup (60ml) Fresh Lemon Juice
  • 1 tsp (5ml) Dried Oregano

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the Vegetables: Slice the Persian cucumbers and halve the cherry tomatoes. Thinly slice the red onion.
  3. Make the Zesty Lemon Herb Vinaigrette: In a bowl, combine olive oil, lemon juice, and oregano, whisking until combined.
  4. Mix Everything Together: In a large bowl, combine the pasta, cucumbers, tomatoes, red onion, olives, and feta. Drizzle vinaigrette over the top and toss gently.
  5. Chill Before Serving: Allow the salad to chill in the refrigerator for at least 30 minutes before serving.
