Mediterranean Potato Salad

A vibrant Mediterranean Potato Salad bursting with flavor, made with baby potatoes, cherry tomatoes, olives, red onions, and fresh herbs dressed in olive oil and lemon juice.

Ingredients

  • 2 lbs baby potatoes, halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes: Wash thoroughly and place them in a large pot with cold water and a pinch of salt. Bring to a boil, lower heat, and simmer until fork-tender (15-20 minutes).
  2. Drain and cool: Drain the potatoes and let cool for a few minutes, patting them dry.
  3. Prep the ingredients: Chop cherry tomatoes, slice red onion, and chop fresh herbs.
  4. Mix the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Combine everything: In a large bowl, combine cooled potatoes, cherry tomatoes, olives, red onions, and herbs.
  6. Dress it up: Pour the dressing over the salad and gently toss.
  7. Chill and marinate: Let the salad sit in the fridge for at least 30 minutes before serving.
  8. Serve: Serve in a large bowl or individual plates, garnished with fresh herbs.

Notes
