  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Skewers (bamboo or metal)

Instructions

  1. Prepare the Skewers: Soak bamboo skewers in water for 30 minutes. Skip this step if using metal skewers.
  2. Cube the Chicken: Cut chicken breasts into evenly-sized cubes (about 1 to 1.5 inches).
  3. Make the Sauce: Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice in a mixing bowl until smooth.
  4. Coat the Chicken: Add chicken cubes to the sauce and toss gently to coat. Marinate for at least 30 minutes if time allows.
  5. Skewer the Chicken: Thread the coated chicken onto soaked skewers, leaving space between pieces.
  6. Grill Time: Preheat grill to medium-high heat, lightly oil grates, and grill skewers for 10-15 minutes, turning occasionally until cooked through.
  7. Serve: Drizzle reserved sauce over skewers and serve with lime wedges.

Notes

For extra flavor, marinate the chicken overnight. You can bake these skewers at 400°F for 20-25 minutes instead of grilling.
