Beetroot Pasta with a Luxurious Beetroot Sauce

  • 2 Fresh Beetroots
  • 2 cups All-Purpose Flour (or substitute with whole wheat or gluten-free)
  • 2 Eggs (or flaxseed meal for vegan)
  • 1 tsp Salt
  • 2 tbsp Olive Oil (or avocado oil)
  • 2 cloves Garlic, minced
  • 1 cup Cream or Coconut Cream (for a vegan option)
  • 1/2 cup grated Parmesan Cheese (or nutritional yeast for vegan)

Instructions

  1. Prepare the Beetroots: Wash, trim, and wrap beetroots in foil. Roast at 400°F (200°C) for 45-60 minutes until tender.
  2. Make the Pasta Dough: Blend roasted beets into puree. Combine with flour, eggs, and salt to form a dough.
  3. Knead the Dough: Knead for 8-10 minutes until smooth. Let rest for 30 minutes.
  4. Roll Out the Pasta: Roll into thin sheets and shape as desired.
  5. Boil the Pasta: Cook in salted water for 2-4 minutes until al dente. Drain and toss with olive oil.
  6. Prepare the Beetroot Sauce: Sauté garlic in olive oil. Add beet puree, cream, and Parmesan, simmer for 5-7 minutes.
  7. Combine and Serve: Toss pasta with sauce and serve with fresh herbs and extra seasoning as desired.

Notes

For added protein, consider adding cooked chicken or shrimp. You can also infuse the pasta dough with spinach for extra flavor.
