Apple Arugula Salad with Maple Pecans

  • 3 apples (sliced very thin)
  • 5 oz arugula
  • 1/4 cup red onion (sliced thin)
  • 1/2 cup figs (chopped)
  • 1/2 cup goat cheese crumbles
  • 1 cup pecan halves
  • 2 Tbsp maple syrup
  • Pinch of sea salt
  • 1/2 cup olive oil
  • 2 tsp maple syrup (for dressing)
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove (minced)
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt (or to taste)

Instructions

  1. Prep Your Ingredients: Start by slicing your apples thinly. Rinse your arugula, pat it dry, and set aside.
  2. Chop the Figs and Red Onion: Chop the figs into small pieces and slice the red onion thinly.
  3. Make the Maple Pecans: In a pan over medium heat, add pecans with 2 tablespoons of maple syrup and a pinch of salt. Toast for 5-7 minutes until golden.
  4. Combine the Base Ingredients: In a large bowl, toss arugula, apples, figs, and red onions together.
  5. Whisk the Dressing: In a small bowl, mix olive oil, Dijon mustard, lemon juice, balsamic vinegar, remaining maple syrup, minced garlic, pepper, and sea salt until blended.
  6. Pour Over Your Salad: Drizzle the dressing over the salad and toss gently.
  7. Add the Cheese and Pecans: Sprinkle goat cheese crumbles and maple pecans over the top and toss gently.

Notes

Can be made ahead of time; store components separately. Adjust dressing sweetness to taste.
