Apple Cider Pork Chops

  • 1 cup 100% pure apple cider
  • 2 sweet onions, sliced
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons butter
  • Salt and freshly cracked pepper to taste

Instructions

  1. Prep your chops: Pat pork chops dry with paper towels, season with salt and pepper, and let sit at room temperature for 30 minutes.
  2. Heat the skillet: Melt butter in a cast-iron skillet over medium-high heat until foamy and browned.
  3. Sear the chops: Add pork chops and sear undisturbed for 4-5 minutes on each side.
  4. Add onions: Remove chops and sauté sliced onions in the drippings for about 2 minutes.
  5. Deglaze with apple cider: Pour in apple cider, scrape up brown bits, and simmer for 2-3 minutes.
  6. Bring it all together: Return chops to the skillet, spoon onions on top, cover, and cook for an additional 10 minutes.
  7. Rest and serve: Remove from heat, let rest for 5 minutes, and serve with the apple cider onion sauce.
