  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your muffin tin by greasing or lining it with paper liners.
  3. Combine dry ingredients: whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  4. Mix wet ingredients: in another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  5. Bring it all together by pouring the wet mixture into the dry ingredients; mix gently until just combined.
  6. Fold in the diced apples carefully.
  7. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.
