Autumn Harvest Pasta

A delightful pasta dish featuring roasted Brussels sprouts, crispy bacon, and tart cranberries, all drizzled with a silky sauce, perfect for celebrating the flavors of fall.

  • 12 ounces pasta (any variety, farfalle recommended)
  • 1 pound Brussels sprouts
  • 6 slices bacon (or turkey bacon for a lighter option)
  • ½ to 1 cup cranberries (dried or fresh)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup Parmesan cheese (or nutritional yeast for a vegan option)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Brussels sprouts by trimming and slicing them in half; toss with olive oil, salt, and pepper, and spread on a baking sheet.
  3. Roast the Brussels sprouts for about 20-25 minutes until golden and crispy.
  4. Bring a large pot of salted water to a boil and cook the pasta until al dente; reserve about a cup of pasta water before draining.
  5. Cook the bacon in a skillet over medium heat until crispy; transfer to a paper towel-lined plate.
  6. Sauté the minced garlic in the skillet for about 30 seconds until fragrant.
  7. Combine the cooked pasta, Brussels sprouts, bacon, and cranberries in the skillet, adding olive oil and reserved pasta water as needed.
  8. Sprinkle with Parmesan cheese and adjust seasoning before serving.
  9. Serve immediately and enjoy!

Notes

For added variety, consider adding grilled chicken, mixed vegetables, or nuts. This dish is best enjoyed fresh but leftovers can be stored in the fridge for up to 3 days.
