Beef Taco Casserole

A cozy twist on your favorite taco night, this Beef Taco Casserole layers tortillas, seasoned beef, and gooey cheese for a warm and hearty meal.

Ingredients

  • 1 pound Ground Beef
  • 8 medium-sized Tortillas
  • 2 cups Shredded Cheese
  • 1 cup Salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat for 5-7 minutes until browned.
  3. Add the salsa and let it simmer for 5 minutes.
  4. Prepare a 9×13 inch baking dish with cooking spray, then layer 4 tortillas at the bottom.
  5. Layer half of the beef mixture over the tortillas.
  6. Sprinkle 1 cup of shredded cheese over the beef mixture.
  7. Repeat the layers with remaining tortillas, beef mixture, and top with the rest of the cheese.
  8. Bake for 25-30 minutes until cheese is bubbly and golden.
  9. Let it rest for 10 minutes before slicing.
  10. Serve with sour cream, avocado, cilantro, or lime.

Notes

You can make this casserole ahead of time and reheat. Consider adding a crunched tortilla chip topping for texture.
