Easy Chicken Caesar Pasta Salad

A comforting classic pasta salad that balances convenience and flavor, perfect for picnics and weeknight dinners.

Ingredients

Scale
  • 2 cups cooked pasta
  • 1 cup cooked chicken, diced
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup Caesar dressing
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Remember, you want it slightly firm since it will continue to cook a little when mixed with the warm chicken.
  2. Prep the Chicken: While the pasta is cooking, prepare your chicken. Ensure it’s diced into bite-sized pieces.
  3. Chop the Veggies: Next, chop your romaine lettuce and halve the cherry tomatoes.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chicken, romaine lettuce, and cherry tomatoes. Gently toss until everything is evenly mixed.
  5. Dress the Salad: Drizzle the Caesar dressing over the pasta salad. Start with about half, then toss gently.
  6. Add Cheese and Season: Sprinkle the grated Parmesan over the top and season with salt and pepper to taste. Give it another gentle toss.
  7. Chill (Optional): For enhanced flavors, let your pasta salad chill in the fridge for about 30 minutes before serving.

Notes

This salad lasts up to 2-3 days in the fridge if stored properly. Keep the dressing separate to avoid sogginess.
