  • 1 pound shrimp, peeled and deveined
  • 2 avocados, diced
  • 2 cups mixed greens
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the shrimp: Heat a skillet over medium-high heat and drizzle in olive oil. Cook shrimp for 2-3 minutes per side until pink and opaque.
  2. Toss the greens: In a large bowl, mix the mixed greens.
  3. Add the citrus: Segment the orange and grapefruit and add the segments to the salad.
  4. Dice the avocado: Cut avocados, scoop out the flesh, dice, and toss gently into the salad.
  5. Slice the onion: Thinly slice red onion and scatter over the salad.
  6. Dressing it up: Whisk olive oil and lime juice, drizzle over the salad, and toss to combine.
  7. Add the shrimp: Allow the shrimp to cool slightly, then add to the salad and toss gently.
  8. Serve and garnish: Transfer to plates or a platter and top with fresh cilantro.

Notes

Adjust seasoning to taste. Pair with warm tortillas or crispy chips.
