Zucchini Garlic Bites

Delicious and healthy Zucchini Garlic Bites, bursting with flavor and perfect for any gathering.

Ingredients

  • 2 medium zucchini
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh herbs (such as parsley or basil), chopped
  • 1 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • Olive oil (for baking or air frying)
  • Marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash your zucchini thoroughly and shred it using a grater or food processor.
  3. Squeeze out the excess moisture from the shredded zucchini.
  4. In a large mixing bowl, combine the shredded zucchini, minced garlic, grated Parmesan, fresh herbs, breadcrumbs, and the egg. Add salt and pepper to your liking.
  5. Scoop out portions of the mixture (about 1-2 tablespoons each) and shape them into little patties.
  6. Line a baking sheet with parchment paper and place the bites on the sheet.
  7. Drizzle olive oil over the top of the bites.
  8. Bake for about 20-25 minutes, flipping halfway through.
  9. Serve warm with marinara sauce on the side.

Notes

These bites can be customized with various herbs and spices. Store any leftovers in an airtight container in the fridge for up to 3 days.
