  • 4 medium zucchini, sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchini: Slice into rounds, about 1/4 inch thick, and let sit with salt for 15-20 minutes.
  3. Rinse and dry those slices with paper towels.
  4. Bread the zucchini: Dip in beaten eggs, then coat with breadcrumb mixture.
  5. Arrange in a baking dish with layers of marinara sauce, zucchini, mozzarella, and repeat.
  6. Drizzle with olive oil.
  7. Bake for 25-30 minutes until golden brown.
  8. Let it cool for a few minutes before serving.
