Broccoli Apple Salad

A vibrant salad that combines crunchy broccoli with sweet-tart apples, enhanced by colorful vegetables and a creamy dressing.

  • 4 cups fresh broccoli florets (about 2 medium heads, chopped small)
  • 2 medium apples (sweet-tart, like Honeycrisp or Gala, diced)
  • ½ cup shredded carrots
  • ⅓ cup dried cranberries
  • ⅓ cup sunflower seeds (or chopped pecans)
  • ¼ cup red onion (finely diced)
  • ½ cup shredded cheddar cheese (optional)
  • Dressing:
  • ½ cup plain Greek yogurt (or mayo, or half and half)
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Pinch of salt and black pepper

Instructions

  1. Prep Your Greens: Start by washing your broccoli florets thoroughly. Pat them dry and chop them into bite-sized pieces.
  2. Chop Those Apples: Wash your apples and dice them. There’s no need to peel them.
  3. Shred the Carrots: Grab your grater and shred the carrots.
  4. Mix the Salad Ingredients: In a large mixing bowl, combine the chopped broccoli, diced apples, shredded carrots, dried cranberries, sunflower seeds, and red onion.
  5. Prepare the Dressing: In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, honey or maple syrup, Dijon mustard, and a pinch of salt and black pepper.
  6. Combine the Salad and Dressing: Pour the dressing over the salad mix and toss until everything is coated.
  7. Chill Time: Cover the bowl with plastic wrap or a lid and let it sit in the fridge for at least 30 minutes.
  8. Final Touches: Give the salad a good stir and adjust the seasoning if needed.

Notes

Dress the salad right before serving to prevent it from becoming soggy. You can prepare all ingredients in advance.
