Easy Pumpkin Bars with Cream Cheese Frosting

  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¾ teaspoon salt
  • 1 ¼ cups granulated sugar
  • ¾ cup salted butter, melted & cooled
  • 3 large eggs
  • 1 ¼ cups pumpkin puree
  • 5 oz. cream cheese, softened
  • ⅓ cup salted butter, softened
  • 2 cups powdered sugar
  • ¾ teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving some overhang.
  2. Sift together the flour, baking powder, baking soda, cinnamon, and salt in a medium bowl.
  3. Whisk together melted butter and granulated sugar in a large bowl until creamy. Add the eggs, vanilla extract, and pumpkin puree, mixing until smooth.
  4. Add dry ingredients to wet mixture gradually, folding until just combined.
  5. Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow the bars to cool completely in the pan on a wire rack before frosting.
  7. Beat the cream cheese and softened butter together until creamy, then gradually add powdered sugar, salt, and vanilla extract until fluffy.
  8. Spread the frosting evenly over the cooled pumpkin bars.
  9. Cut into squares and serve. Drizzle with caramel or garnish if desired.
