Authentic Greek Chicken Gyros

Experience the nostalgic flavors of homemade Greek Chicken Gyros, wrapped in warm pita with fresh veggies and creamy tzatziki.

  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup tzatziki sauce
  • 4 pita bread
  • Sliced tomatoes
  • Sliced red onion
  • Chopped lettuce

Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper. Whisk until blended.
  2. Marinate the Chicken: Add the chicken thighs to the marinade and coat thoroughly. Preferably marinate for at least 30 minutes, or overnight for best flavor.
  3. Preheat the Grill: Preheat the grill to medium-high heat.
  4. Grill the Chicken: Grill the marinated chicken thighs for 6-7 minutes per side until they reach an internal temperature of 165°F.
  5. Rest and Slice: Allow the chicken to rest for 5 minutes, then slice into thin strips.
  6. Assemble Your Gyros: Warm pita bread on the grill, layer with sliced chicken, tzatziki sauce, tomatoes, red onion, and lettuce.
  7. Wrap It Up: Fold the pita sides over the filling and roll from the bottom to secure your gyro.

Notes

Serve with extra tzatziki and a side of Greek fries drizzled with lemon.
