Cozy Turkey Meatball Soup

A comforting and hearty turkey meatball soup filled with tender meatballs, colorful vegetables, and fragrant herbs, perfect for family dinners and chilly days.

  • 1 lb Ground Turkey
  • 1 cup Breadcrumbs
  • 1 Egg
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 sticks Celery, diced
  • 2 cups Spinach, chopped
  • 4 cups Chicken or Vegetable Broth
  • 1 tbsp Italian Seasoning
  • Salt and Pepper to taste
  • Olive Oil for cooking

Instructions

  1. Combine the ground turkey, breadcrumbs, egg, minced garlic, diced onion, and a pinch of salt and pepper in a mixing bowl. Mix gently with your hands.
  2. Form the mixture into small meatballs, about the size of a golf ball, and place them on a parchment-lined baking sheet.
  3. Heat a drizzle of olive oil in a large soup pot over medium heat. Add the meatballs in batches and sear until nicely browned on all sides, about 5-7 minutes.
  4. Remove the meatballs and set aside. In the same pot, add more olive oil if needed, and sauté the diced carrots and celery for about 5 minutes until softened.
  5. Add the minced garlic and cook for another minute until fragrant.
  6. Pour in the broth and stir to combine. Bring it to a gentle boil.
  7. Return the browned meatballs to the pot, reduce heat, cover, and let simmer for about 20 minutes.
  8. Add the chopped spinach in the last few minutes of cooking and season to taste.

Notes

Serve with crusty bread or a fresh garden salad. Feel free to experiment with spices and herbs for different flavors.
