Lemon Blueberry Muffins

Bright and flavorful lemon blueberry muffins that make mornings special.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries
  • 1/4 cup crumb topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients: In another bowl, whisk together the melted butter, milk, eggs, vanilla, and lemon zest until well combined.
  4. Mix the wet and dry ingredients together, folding gently with a spatula until just combined.
  5. Add the blueberries to the batter, folding gently to avoid crushing them.
  6. Scoop the batter into muffin cups, filling each about 2/3 full.
  7. Bake for about 18-20 minutes, or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

Serve warm with butter or honey for a delicious breakfast treat. They can be stored in an airtight container for 2-3 days at room temperature.
