Mediterranean Lemon-Dill Chicken Bowls

A vibrant dish featuring grilled chicken, fresh veggies, and a tangy lemon-dill dressing served over rice or quinoa.

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh dill
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 2 cups chopped fresh veggies (cucumbers, bell peppers, tomatoes)
  • 2 cups cooked rice or quinoa (optional)
  • Crumbled feta cheese (optional, for serving)

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, dill, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
  2. Grill the chicken on medium-high heat for 6-7 minutes per side until cooked through (165°F internal temperature).
  3. Prepare the veggies by dicing cucumbers and bell peppers and halving the tomatoes.
  4. Make the dressing by mixing olive oil, lemon juice, garlic, and dill. Add Greek yogurt for creaminess if desired.
  5. Assemble your bowls starting with rice or quinoa, topping with grilled chicken and chopped veggies.
  6. Garnish with extra dill or feta cheese before serving and enjoy!
