Garlic Butter Beef Bites with Potatoes

  • 1 pound beef, cut into bite-sized pieces (sirloin, ribeye, or chuck roast)
  • 2 cups baby potatoes, halved
  • 4 tablespoons garlic butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • 1/2 cup beef broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baby potatoes by tossing them in olive oil, salt, and pepper; spread them on a baking sheet.
  3. Bake the potatoes for about 20 minutes until tender.
  4. Sear the beef in a heated skillet with garlic butter for 3–4 minutes per side.
  5. Add salt, pepper, and thyme to the beef, stirring to combine.
  6. Combine the beef with beef broth and simmer for 5–7 minutes.
  7. Finish by adding the roasted potatoes to the skillet and tossing to coat.
  8. Plate the beef bites and potatoes, drizzling with sauce.

Notes
