Sausage Pumpkin Pasta

A cozy and heartwarming pasta dish combining savory sausage and sweet pumpkin, perfect for fall.

  • 12 oz penne pasta
  • 1 lb Italian sausage (or turkey/chicken sausage)
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated parmesan cheese
  • Olive oil for cooking
  • Salt and pepper to taste

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a rolling boil. Toss in your penne and cook according to the package directions until al dente. Save about a cup of the pasta cooking water.
  2. Cook the sausage: In a large skillet over medium heat, add olive oil and start cooking your sausage (casings removed). Break it up with a wooden spoon.
  3. Aromatics: Add minced garlic and chopped onions to the pan. Sauté for another 3-4 minutes until the onions are translucent.
  4. Incorporate the pumpkin: Stir in the pumpkin puree, mixing it well with the sausage and onions. Let it warm up for a couple of minutes.
  5. Cream it up: Gradually pour in heavy cream, blending it into the pumpkin mixture. Use reserved pasta water if needed to loosen it up.
  6. Combine with pasta: Drain the pasta and toss it with the pumpkin sauce in the skillet over low heat. Mix well to coat every piece of pasta.
  7. Finishing touches: Stir in freshly grated parmesan cheese until melted. Serve hot with garnishes.

Notes

Feel free to swap penne for your favorite pasta shape. Can be made gluten-free with appropriate pasta.
