  • 1 pound ground lamb or beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups mixed vegetables
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Start by gathering your mis en place—getting all your ingredients prepped.
  2. Heat your olive oil over medium heat in a large skillet and add the diced onion. Sauté for about 3-4 minutes until translucent.
  3. Add the carrots and celery, stirring them in to soften and release their sweetness.
  4. Incorporate the ground lamb or beef, breaking it up with a spoon. Cook for about 5-7 minutes until browned.
  5. Stir in the mixed vegetables, tomato paste, Worcestershire sauce, and red wine. Let simmer for about 5 minutes.
  6. Pour in the beef broth and simmer for another 10-15 minutes until thickened.
  7. Prepare your mashed potatoes while the filling simmers, making them creamy yet firm.
  8. Preheat your oven to 400°F (200°C). Spread the meat mixture in a casserole dish and top with mashed potatoes.
  9. Bake for about 25-30 minutes until the top is golden brown.
  10. Cool for a few minutes before serving to allow layers to settle.
