French Onion Pasta

A comforting dish that combines the rich flavors of French onion soup with pasta, creating a warm and hearty meal.

  • 8 ounces pasta (penne or rigatoni)
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • Salt and pepper, to taste
  • Fresh thyme for garnish

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the pasta and cook until al dente, reserving about ½ cup of pasta water before draining.
  2. Caramelize the onions in a deep skillet or Dutch oven with melted butter and a pinch of salt for about 20-25 minutes until golden brown.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Pour in the beef or vegetable broth, scraping up any bits stuck to the bottom of the pan.
  5. Incorporate the heavy cream and let it simmer for about 5 minutes to thicken slightly.
  6. Mix in the grated Gruyère cheese until melted and creamy.
  7. Combine the drained pasta with the creamy onion mixture, adding reserved pasta water as necessary for desired consistency.
  8. Season with salt and pepper to taste.
  9. Serve the pasta topped with additional Gruyère and fresh thyme garnish.

Notes

For a lighter option, you can substitute heavy cream with half-and-half or whole milk, or use coconut cream for a dairy-free alternative.
