  • 1 Baguette or Crostini, sliced
  • 1 cup Whipped Ricotta Cheese
  • Honey, for drizzling
  • Fresh Basil, chopped
  • Salt, to taste
  • Olive Oil, for toasting

Instructions

  1. Prep the Peaches: Wash and slice the peaches, remove the pit, and dice into bite-sized chunks. Toss with a pinch of salt and honey.
  2. Make the Whipped Ricotta: In a bowl, whisk ricotta cheese until fluffy (2-3 minutes). Add vanilla or lemon zest if desired.
  3. Toast Your Bread: Preheat oven to 400°F (200°C). Slice baguette and drizzle with olive oil. Toast for 5-7 minutes until golden.
  4. Assemble the Bruschetta: Spread whipped ricotta on toasted bread and top with diced peaches.
