Homemade Peach Cobbler Muffins

Delightful muffins bursting with sweet peach goodness, reminiscent of warm summer days.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or canned peaches, diced
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour (for topping)
  • 1/4 cup unsalted butter, softened (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your muffin pan by greasing it or lining with paper liners.
  3. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, salt, and cinnamon.
  4. Combine the wet ingredients in another bowl: melted butter, milk, eggs, and vanilla extract.
  5. Bring the wet ingredients into the dry mixture and stir gently until just combined.
  6. Fold in the diced peaches carefully.
  7. Prepare the topping by mixing brown sugar, oats, flour, softened butter, and cinnamon until crumbly.
  8. Fill the muffin tin with the batter, topping generously with the crumb mixture.
  9. Bake for 20-25 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm with butter. These muffins can also be enjoyed with coffee or milk.
