Sausage Stuffed Peppers

A delightful recipe for colorful and hearty sausage stuffed peppers, perfect for cozy dinners and festive gatherings.

  • 4 Bell Peppers (red, green, yellow, or orange)
  • 1 lb Italian Sausage (or turkey/chicken for lighter option)
  • 1 cup Rice (long-grain white or brown; quinoa for gluten-free)
  • 1 cup Shredded Cheese (mozzarella, provolone, cheddar, or feta)
  • 1 tbsp Olive Oil
  • 1 cup Marinara Sauce (for baking)
  • Spices (Italian herbs, red pepper flakes, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by washing, slicing the tops off, and removing seeds.
  3. Cook the rice according to package instructions.
  4. Sauté the sausage in olive oil until browned, about 6-8 minutes, and drain excess fat.
  5. Mix the cooked sausage, rice, half of the cheese, and spices in a bowl.
  6. Stuff each pepper with the sausage mixture.
  7. Add marinara sauce around the peppers in the baking dish.
  8. Bake covered with foil for 30 minutes; remove foil for the last 10 minutes.
  9. Finish with remaining cheese in the last 5 minutes of baking.
  10. Cool for 5 minutes before serving.

Notes

For a spicy kick, add jalapeños or red pepper flakes. You can also make these ahead and refrigerate before baking.
