Sicilian Tomato Pesto

A vibrant blend of sun-dried tomatoes, fresh basil, and toasted almonds, capturing the essence of Sicilian cuisine.

  • 1 cup sun-dried tomatoes
  • 2 cups fresh basil leaves
  • 3 cloves garlic
  • ½ cup grated Parmesan cheese
  • ¼ cup toasted almonds
  • ½ cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by measuring everything out before you start blending.
  2. Toast the almonds in a small skillet over medium heat for about 5 minutes.
  3. Blend the sun-dried tomatoes, fresh basil, toasted almonds, garlic, and Parmesan cheese in a food processor until coarsely chopped.
  4. Add olive oil gradually while the food processor runs to achieve a smooth consistency.
  5. Season to taste with salt, pepper, or lemon juice and blend again to combine.
  6. Store in an airtight container with a drizzle of olive oil on top if not used immediately.

Notes

Great served over pasta, as a sandwich spread, or with crusty bread. Freeze leftovers in ice cube trays for easy portions.
