  • 1 can black beans, drained and rinsed
  • 1.5 cups corn kernels (fresh or frozen)
  • 1.5 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro, chopped
  • 2 limes
  • Salt and pepper to taste

Instructions

  1. Prep the chicken: Pat the chicken dry and season both sides with salt, pepper, cumin, chili powder, and paprika.
  2. Heat the oil: In a large skillet, heat the olive oil over medium-high heat.
  3. Sear the chicken: Cook the chicken for about 5-7 minutes per side until golden brown and cooked through.
  4. Let it rest: Transfer the chicken to a cutting board and allow it to rest for 5-10 minutes.
  5. Cook the corn and beans: In the same skillet, add the corn and black beans, sautéing for about 3-4 minutes.
  6. Prepare the rice: Reheat your cooked rice, mixing in salt and lime juice for flavor.
  7. Slice the chicken: Cut the rested chicken into bite-sized pieces.
  8. Assembly time: Layer rice, corn and bean mixture, sliced chicken, diced tomatoes, and cheese in a large bowl.
  9. Add toppings: Finish with sliced avocado, sour cream, cilantro, and a squeeze of lime.
