Sweet Strawberry Crisp

A delightful and comforting strawberry crisp that warms the heart with its juicy fruit base and crunchy, buttery topping.

  • 5 heaping cups fresh strawberries (hulled and quartered)
  • 1/4 cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 3 Tablespoons cornstarch
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 2/3 cup granulated white sugar
  • 2/3 cup packed brown sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 cup (1 stick) butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine strawberries, 1/4 cup granulated sugar, vanilla extract, and cornstarch in a large mixing bowl; toss to coat.
  3. Pour sweetened strawberries into a greased 8×8-inch baking dish.
  4. Whisk together flour, oats, 2/3 cup granulated sugar, brown sugar, salt, and cinnamon in another bowl. Add melted butter and mix until crumbly.
  5. Spread the topping evenly over the strawberries.
  6. Bake for 35–40 minutes until the topping is golden and the strawberries are bubbly.
  7. Cool for 15–20 minutes before serving.
  8. Serve warm with vanilla ice cream or whipped cream.

Notes

For a vegan option, substitute the butter with coconut oil and use maple syrup instead of sugar.
