Glazed Strawberry Bread

A delightful and nostalgic bread featuring fresh strawberries, topped with a sweet strawberry glaze.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, chopped
  • 1 cup powdered sugar for glaze
  • 2 tablespoons fresh strawberry juice or water for glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing it or lining it with parchment paper.
  3. Mix together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Blend the melted butter, eggs, vanilla extract, and milk in a separate bowl until smooth.
  5. Combine the wet mixture into the dry ingredients and stir gently until just mixed.
  6. Add the chopped strawberries and gently fold them into the batter.
  7. Transfer the batter into the prepared loaf pan, smoothing the top.
  8. Bake for about 50 to 60 minutes, until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Prepare the glaze by whisking the powdered sugar with strawberry juice or water until smooth.
  11. Glaze the cooled bread and let it set before serving.
