Arugula Nectarine Salad with Fresh Basil Dressing

Ingredients

  • 2 ripe nectarines, sliced
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and dry the greens: Rinse the arugula under cool water and spin dry to avoid sogginess.
  2. Prep the nectarines: Slice into thin wedges, keeping the skin on for added color and nutrients.
  3. Make the dressing: Combine basil, olive oil, balsamic vinegar, salt, and pepper in a bowl or jar; whisk or shake until emulsified.
  4. Assemble the salad: Add arugula to a large bowl, arrange nectarine slices on top, and drizzle with dressing.
  5. Toss gently: Mix the salad ingredients lightly without bruising the leaves.
  6. Serve immediately: Enjoy fresh, optionally adding feta or goat cheese for creaminess.
