Ultimate Summer Peach Salad

A vibrant and refreshing summer salad featuring sweet peaches, crunchy nuts, creamy feta, and mixed greens, dressed in tangy balsamic vinaigrette.

  • 4 ripe peaches, sliced
  • 5 cups mixed greens
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts or pecans, toasted
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prep the peaches: Wash the peaches thoroughly, slice them in half around the pit, twist to separate, and scoop out the pit. Slice each half into wedges and place in a large salad bowl.
  2. Toss in greens: Rinse mixed greens under cold water, spin dry, and add to the bowl with peaches.
  3. Slice the red onion: Slice the red onion as thinly as possible, soak in cold water if necessary, then add to the salad.
  4. Add feta and nuts: Crumble feta cheese over the salad and sprinkle with toasted nuts.
  5. Prepare the dressing: Whisk together olive oil, balsamic vinegar, and a pinch of salt and pepper. Drizzle over salad.
  6. Toss and serve: Gently toss the salad and serve immediately for optimal freshness.

Notes

For a smoky flavor, consider grilling the peach slices. This salad can also be made nut-free by using chickpeas.
