Tomato Basil Pasta

A vibrant and flavorful Tomato Basil Pasta featuring sweet cherry tomatoes, fresh basil, and a hint of garlic.

  • ½ lb (8oz/220 grams) pasta
  • 2 Tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • ¼ teaspoon chili flakes
  • 2 ½ cups (approx 12oz/350 grams) cherry tomatoes, halved
  • ¼ teaspoon fine salt
  • ⅛ teaspoon freshly cracked black pepper
  • 1 cup fresh basil leaves, shredded
  • Grated parmesan cheese, to serve (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add the pasta and cook per package instructions until al dente, saving 1 cup of pasta water before draining.
  2. Sauté garlic: Heat olive oil in a large skillet over medium heat, add minced garlic and chili flakes, and sauté for about 1-2 minutes until fragrant.
  3. Add cherry tomatoes: Place the halved cherry tomatoes in the skillet, season with salt and pepper, and sauté for 5-7 minutes until they soften.
  4. Combine everything: Add cooked pasta to the skillet and toss with the tomatoes, adding reserved pasta water as needed.
  5. Add fresh basil: Stir in the shredded basil and mix to combine, adjusting seasoning as needed.
  6. Serve it up: Plate the pasta, drizzle with olive oil, and top with grated Parmesan if desired.

Notes
