  • 1 cucumber, peeled and diced
  • 1 small red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

  1. Prep your vegetables: Start by washing your tomatoes and cucumbers thoroughly. Dice the tomatoes into bite-sized pieces and peel then dice the cucumber.
  2. Slice the onion: Thinly slice the red onion to blend well with the other ingredients. Soak in cold water if desired.
  3. Mix the dressing: Whisk together olive oil, red wine vinegar, sugar, salt, and pepper in a small bowl.
  4. Combine it all: In a large bowl, mix diced tomatoes, cucumbers, and sliced onions, then pour the dressing over and gently toss.
  5. Garnish and serve: Add your chosen fresh herbs and allow the salad to sit for 10 minutes before serving to blend flavors.
