Watermelon Feta Salad

A refreshing summer salad that combines sweet watermelon with creamy feta for a delightful dish perfect for picnics and gatherings.

Ingredients

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the watermelon by slicing it into quarters and cutting the flesh into cubes.
  2. Crumble the feta cheese into bite-sized pieces in a bowl.
  3. Chop the fresh mint leaves into small pieces.
  4. Slice the red onion thinly and add it to the bowl with the feta.
  5. Combine the watermelon cubes, crumbled feta, chopped mint, and sliced onion in a large mixing bowl.
  6. Dress the salad with a mixture of olive oil and balsamic vinegar, and toss gently.
  7. Serve the salad on a platter or in individual bowls, garnished with additional mint leaves.

Notes

Leftover salad is best enjoyed the next day, but it may become watery over time.
