Refreshing Watermelon Popsicles

Delightful watermelon popsicles made with fresh watermelon, creamy coconut yogurt, and zesty kiwis; a perfect summer treat!

  • 3 Cups Watermelon (Cubed)
  • 3/4 Cup Coconut Yogurt
  • 5 Kiwis (Cubed)

Instructions

  1. Prepare the Fruit: Start off by cubing your watermelon and kiwis. Pick a ripe watermelon and slice it into manageable chunks.
  2. Blend the Watermelon: Place the cubed watermelon into a blender. Blend on high until smooth, about 1–2 minutes.
  3. Add Coconut Yogurt: Add the coconut yogurt to the watermelon juice and blend until fully combined.
  4. Create the Kiwi Layer: In a separate bowl, mix the cubed kiwis with a touch of lemon juice.
  5. Combine and Fill the Molds: Pour the watermelon mixture into popsicle molds, leaving space for kiwi cubes on top.
  6. Freeze: Place the filled molds into the freezer for at least 6 hours until solid.
  7. Enjoy: Run the molds under warm water for a few seconds to easily release the popsicles.

Notes

For added texture, consider leaving some small watermelon pieces when blending. Use mint for garnish.
