Zucchini Fritters

Crispy and golden zucchini fritters that celebrate fresh summer flavors and bring joy to your kitchen.

Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Prep your zucchini by grating it and squeezing out excess moisture using a kitchen towel.
  2. Mix the squeezed zucchini, grated Parmesan, shredded mozzarella, flour, eggs, minced garlic, salt, and pepper in a large bowl.
  3. Heat vegetable oil in a non-stick skillet over medium heat.
  4. Form patties from the zucchini mixture and gently place them in the hot oil.
  5. Fry the fritters for 3-4 minutes on each side until golden brown and crispy.
  6. Drain the fritters on paper towels to absorb excess oil.
  7. Serve warm with your choice of dipping sauce.

Notes

Feel free to incorporate fresh herbs or swap the cheese for alternatives if needed. Bake instead of frying for a lighter option.
