Nectarine Galette

A rustic and delightful nectarines galette that celebrates the flavors of summer fruits while offering a cozy baking experience.

  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, chilled and diced
  • 68 tablespoons ice water
  • 45 ripe nectarines, sliced
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar for topping

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, whisk together the flour, salt, and 1/4 cup sugar.
  2. Cut in the butter: Add the chilled, diced butter to the flour mixture and aim for a crumbly texture.
  3. Add ice water: Gradually add the ice water, one tablespoon at a time, until the dough comes together.
  4. Chill the dough: Form into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  5. Slice the nectarines: While the dough chills, slice the nectarines and toss them with cinnamon, vanilla extract, lemon juice, and sugar.
  6. Roll out the dough: Once chilled, roll out the dough into a rough circle, about 12 inches in diameter.
  7. Transfer the dough: Move the dough to a baking sheet lined with parchment paper.
  8. Layer the filling: Place the nectarine mixture in the center of the dough, leaving about a 2-inch border.
  9. Fold over the edges: Gently fold the dough edges over the filling to create a border.
  10. Sprinkle and bake: Sprinkle the top with sugar and bake in a preheated oven at 375°F (190°C) for 30-35 minutes.
  11. Let it cool: Once out of the oven, let the galette cool for about 10 minutes before slicing.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. You can also add a sprinkle of mint or a drizzle of honey for extra indulgence.
