No-Bake Peanut Butter Cheesecake

A rich and creamy no-bake peanut butter cheesecake with a delightful Oreo crust, perfect for any gathering.

  • 36 Oreo cookies
  • 7 tablespoons unsalted butter (melted)
  • 1 cup whipping cream (at least 33% MF)
  • 24 ounces full-fat cream cheese (softened to room temperature)
  • 1 1/4 cup smooth peanut butter
  • 1 1/4 cup powdered sugar (sifted)
  • 1/4 cup sour cream
  • 4 oz dark or semi-sweet chocolate
  • 1/3 cup whipping cream (for ganache)
  • 1/2 cup whipping cream (for filling)
  • Peanut butter cups (for garnish)

Instructions

  1. Make the Oreo crust: Crush the Oreo cookies until fine crumbs. Combine with melted butter and press into a 9-inch springform pan. Refrigerate.
  2. Whip the cream: Whip 1 cup of heavy cream until soft peaks form.
  3. Beat the cream cheese until creamy, mix in peanut butter, then add powdered sugar and sour cream.
  4. Fold the whipped cream into the peanut butter mixture until combined.
  5. Pour the filling into the chilled crust and spread evenly. Chill for at least 4 hours.
  6. Prepare the ganache: Heat 1/3 cup whipping cream, mix in chopped chocolate, whisk until smooth.
  7. Cool the ganache slightly, then pour over the cheesecake.
  8. Garnish with peanut butter cups. Slice and serve chilled.

Notes

You can substitute other chocolate cookies for the crust and add fruit layers for variation.
