  • 8 oz cream cheese, softened
  • 1 cup white chocolate chips
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin spice
  • Sprinkles or crushed nuts for coating

Instructions

  1. Prepare the pumpkin bread by making your own or using store-bought; let it cool completely.
  2. Crumble the bread into small pieces in a large bowl, or use a food processor for a fine crumb.
  3. Mix in the softened cream cheese until well combined into a moist dough.
  4. Add the vanilla extract and pumpkin spice, mixing until evenly distributed.
  5. Chill the mixture in the refrigerator for about 30 minutes.
  6. Melt the white chocolate chips in a microwave-safe bowl until smooth.
  7. Shape the chilled mixture into small balls (about 1 inch) and place them on a parchment-lined baking sheet.
  8. Dip each truffle into the melted white chocolate and let excess chocolate fall back in the bowl.
  9. Let the truffles set in the fridge for about 30 minutes until the chocolate hardens.
