  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup apple pie filling
  • Optional: whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by lining a 12-cup muffin pan with cupcake liners.
  3. Mix the dry ingredients in a medium bowl: flour, baking powder, cinnamon, nutmeg, and a pinch of salt.
  4. Cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  5. Add the eggs one at a time and then mix in the vanilla extract.
  6. Combine the wet and dry mixtures, mixing just until combined.
  7. Fold in the apple pie filling gently into the batter.
  8. Fill the muffin cups, about 2/3 full with batter.
  9. Bake in the preheated oven for 18-22 minutes until a toothpick inserted comes out clean.
  10. Cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

Top with whipped cream and a sprinkle of cinnamon for an extra treat.
