Easy Strawberry Cake

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare two 9-inch round cake pans by greasing them with butter or cooking spray.
  3. Mix together 2 cups of all-purpose flour, 3 1/2 teaspoons baking powder, and 1/2 teaspoon of salt in a large bowl.
  4. Cream the softened unsalted butter and the cup of sugar until light and fluffy.
  5. Add the eggs one at a time, blending well after each addition, then mix in the vanilla extract.
  6. Combine the dry mixture with 1 cup of milk, alternating between the two until fully mixed.
  7. Fold in the chopped strawberries into the batter.
  8. Pour the batter evenly into the prepared pans and smooth the tops.
  9. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  10. Cool the cakes in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  11. Frost if desired, and enjoy!

Notes

Consider frosting with whipped cream or cream cheese frosting. For added flavor, you can incorporate lemon zest or nuts.
