Cozy Autumn Chicken Dinner

A heartwarming recipe bringing together tender chicken, sweet potatoes, and Brussels sprouts for a cozy autumn dinner.

  • 4 chicken thighs or breasts
  • 2 sweet potatoes, diced
  • 2 cups Brussels sprouts, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the chicken with olive oil, salt, pepper, garlic powder, and thyme.
  3. Toss sweet potatoes and Brussels sprouts in a bowl with olive oil, salt, and pepper.
  4. Arrange the chicken in the center of a baking sheet and surround it with the veggies.
  5. Roast for about 30-35 minutes, shaking the pan halfway through.
  6. Check the chicken’s internal temperature for doneness (at least 165°F or 75°C).
  7. Rest for about 5 minutes before serving with the roasted sweet potatoes and Brussels sprouts.
