Beef Bourguignon

A classic French stew of tender beef, rich red wine, and earthy mushrooms, perfect for cozy gatherings.

Ingredients

  • Beef Chuck Roast (2-3 pounds)
  • Carrots (2-3, chopped)
  • Mushrooms (8 ounces, sliced)
  • Red Wine (1 bottle, about 750 mL)
  • Beef Stock (2 cups)
  • Onions (2 medium, finely chopped)
  • Garlic (4 cloves, minced)
  • Bay Leaves (2)
  • Thyme (fresh or dried, about 1 teaspoon)
  • Olive Oil (2-3 tablespoons)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare the ingredients by chopping your onions, carrots, and mushrooms.
  2. Brown the beef in a large pot with olive oil over medium-high heat.
  3. Sauté the vegetables, starting with onions and carrots until softened.
  4. Add the minced garlic and sliced mushrooms to the pot and sauté until tender.
  5. Pour in the red wine, scraping the pot to deglaze.
  6. Return the beef to the pot, add beef stock, bay leaves, thyme, and salt.
  7. Slow cook for 120-180 minutes until the beef is fork-tender.
  8. Final taste and adjust seasoning before serving.

Notes

You can make this dish in advance to enhance the flavors. Serve with mashed potatoes or crusty bread.
